Low Carb Chocolate Chip Mug Cookie
Confession: I am kind of a cookie snob. I have my favorite Chocolate Chip Cookie recipe that I’ve perfected, and it’s hard for other cookies to measure up! However, as much as I love my Chocolate Chip Cookies, my jeans are getting tight. Kids and cookies will do that to ya! The Chocolate Chip Cookies are really only a special occasion thing (hello calories!), but I love to bake and a girl has to have a cookie every now-and-then! I’ve recently decided I need to get back to it and make healthier choices. Life is short though, and I don’t think we were meant to live without the simple pleasure of a Chocolate Chip Cookie. HA! A little mind shift and re-inventing of a recipe is all it takes. I follow the Trim Healthy Mama eating plan, and I love that they aren’t about depriving, but shifting your thinking into different and healthier choices.It’s been hot around here, and there is no way I’m going to turn the oven on in 105* degree summer heat to bake cookies. Even healthy cookies. Microwave mug baking to the rescue! In less than 2 minutes I (and you!) can have a nice little cookie treat. If you’re a Trim Healthy Mama, make sure to keep this in an {S} setting!
Ingredients
(Disclosure: This blog post contains affiliate links for your convenience. Please see here for more info on affiliate links.)- 1 Tablespoon of Butter (or swap out 1 TBS of Coconut Oil if you prefer)
- Sweetener of your choice, sweeten to taste (I use the THM Stevia or coconut sugar)
- Dash of Vanilla
- 1 Egg Yolk
- Pinch of Pink Sea Salt
- 3 Tablespoons of Ground Almonds (Almond Meal)
- 1 Tablespoon of Bittersweet Dark Chocolate Chips (I use these because I can buy them at my grocery store, but to keep it THM friendly, you can use this brand).
- 1 teaspoon Collagen (optional)
Directions
1) Melt the butter in a mug in the microwave. You just want it soft and a little “melty”, not too hot. About 15 seconds in the microwave works for me.
2) Add the egg yolk, vanilla, sweetener and salt to the butter. Mix with a fork until well blended.
That’s all there is to it! The Low Carb Chocolate Chip Mug Cookie is a protein packed snack. Just make sure you share it with someone (if you have kids that won’t be a problem!), or save half for later. It’s a healthier option, but it’s definitely a higher-fat (although good fat) cookie.

3) This is completely optional, and if you don’t have the collagen on hand it won’t hurt the recipe to leave it out. But if you want to add a little extra protein and the benefits of collagen, add 1 teaspoon and mix into the “dough”.
4) Add the almond meal and stir in the chocolate chips. I put raw almonds in a blender to make my almond meal, but you can buy it pre-made. Trader Joe’s has it, and I’m sure most grocery stores will have it in their “health/natural food” section.
5) Microwave on medium heat for around 55 seconds. In my microwave, 55 seconds is the perfect amount of time. You do not want to over-cook the cookie or else it will dry out! You can eat it straight out of the mug, or let it cool and plop it out on a plate. Fully cooled, it is fairly firm and you can put it in a baggie to take along with you. It's a little messy to eat that way, so make sure to take a fork or spoon with you!

Today is my third day on THM and the first time I've been tempted to cheat. I let myself get too hungry and I'd been wanting something sweet all day. I found this in a Google search and I have to say ... it really hit the spot. I enjoyed it so much, I was tempted to make a second - except it would have put me over the carb allowance for an S meal. :)
