Low Carb Chocolate Chip Mug Cookie Recipe | Trim Healthy Mama and Paleo Friendly

Do you love a good Chocolate Chip Cookie recipe? Are you looking for a recipe that’s easy, low carb, and possibly sugar free? Don’t want to turn the oven on, or bake a huge batch of cookies? I have the perfect afternoon or late night snack just for you! It’s protein packed, is Trim Healthy Mama friendly, and with a simple substitute of an ingredient or 2 it can be Paleo friendly as well. It’s pretty much the perfect cookie…and trust me, I know cookies! When I make one of these, my kids turn into vultures and circle like loud seagulls begging for a bite. While you could eat the entire cookie by yourself, it’s probably better to share it. Trust me, it’s pretty filling! But...it will be hard not to eat it all!

Chicken Salad

Chicken Salad is one of my favorite go-to easy recipes for summer picnics and spring brunches. It is especially great for bridal showers or baby showers since you can make it ahead the day before, or it's easy and fast enough to make the day of your party. This Chicken Salad recipe only uses 4 ingredients, or 5 if you throw in a handful of cashews! I like to serve the Chicken Salad on a croissant roll for parties, but because I've been watching my carbs lately it's still really yummy on a bed of lettuce, or salad...but bed of lettuce sounds so much more elegant! (ha!) I love this Chicken Salad recipe for the summer because you don't have to turn on the oven unless that's your preferred cooking method. I use the Crock-Pot to cook the chicken breasts. This Chicken Salad recipe really couldn't be any easier!

I follow the Trim Healthy Mama eating plan, and if you're a THM'er too, this Chicken Salad recipe would fall under the S meal category. Of course, you can always tweak it to be a crossover if you're pregnant or nursing or just need a crossover, but it's a really easy S meal and full of protein.

Trim Healthy Mama

Trim Healthy Mama is NOT a diet. I repeat, NOT a diet! OK, I guess technically speaking, by definition, it is a diet. However, I consider it more of a healthy living whole foods lifestyle. Before I got pregnant with my second child, I lost 35 pounds in 4 months by following the Trim Healthy Mama plan and working out. How awesomely crazy is that?! I've never been one to stick to diets because, well, who likes diets?! Even the word sounds so restrictive. And if I can't have chocolate? Ya, I'm out, not gonna happen! But I digress. Fast forward to present time, and now that I've birthed another tiny human from my body, my poor flabby body needs some self love and care. Let's get real, shall we?  I gained about 35 pounds during my pregnancy with my second. (Which is exactly what I gained with my first!) I am, unfortunately, not one of those lucky moms that breastfeeds and looses all the pregnancy weight (plus some) in some incredibly short amount of time. Nope. I have to work hard and pay in blood, sweat and tears for every single ounce I loose. I also have to eat a very balanced diet of healthy fats and healthy carbs in order to maintain my milk supply, and I eat. A lot. Oh the hunger of a breastfeeding mom!!! Seriously though, it's crazy how hungry I get when I'm breastfeeding! So enough about that...on to the Trim Healthy Mama talk.
